I feel like deathless is a lot harder than speedruns simply because of the ink delay, if that was fixed it wouldn't have been nearly as hard. Speedruns were pretty challenging but at least you could make a 1-2 minutes of mistakes.

Yeah, what he said, could have something do with buying/not buying his items so which ever one you do, switch it up.

He's probably the most common NPC for sure but you shouldn't be getting him all the time. But this game is weird so who knows whats causing it, probably just bad RNG. What I did was restart after getting to the first floor if I dont get an NPC door, except for the old mans quest, he seemed to appear on 4th floor mostly.

I thoght buying the items is the case as well. I'll buy some more I guess, though I have bought all skins

The description for those is not accurate. You need to buy at least 30 items in the shop for the trophy. For Winchester, just win 3 games.

I'm not sure whats going on but shopkeeper hasnt mentioned a metal stool once so far and I am almost done with every other quest. Has anyone else made any progress with him?

The damn RNG mini-games are the hardest part about this game. Very annyoing.
