Is there any merit to buying the Anniversary edition in terms of trophies?

Very unlikely to be honest.

 

Although, from playing the game previously - the Dawnguard DLC requires you acquire Werewolf & Vampire perks, and you obtain those by killing & eating people - the easiest way to do that (I found at least) were in the bandit camps, which the Saints & Seducers adds.

 

Saints & Seducers is free if you have the SE edition anyway - Legendary upgrade is not required.

I'll probably plat the game again since the upgrade itself is free but not sure about throwing out another 20 which i can place on other games.

The anniversary content is targeted at people who enjoy playing the game for the sake of playing the game and who want more content. There's nothing there that would make it easier to get trophies, there's already a ton of content in the base game so you should have no issues whatsoever getting the Platinum and 100% with what you already own. That's basically how everyone else did it. ?
