Still it's recommended to play base game and install dlc one by one, it doesn't offer gigantic performance changes but gives you more time to play before your savefile reaches infamous 12MB mark

When you play on one character for too long Skyrim becomes more and more hard to play in terms of performance including fps drop, stuttering, huge loading times and etc. Still you can do A LOT in this game without experiencing major issues, but if you really looking for best Skyrim experience, go for PC version.

It's a bug inherent to the poorly optimised dog shit of an engine that Bugthesda used for every single game they developed for the PS3. Once your save file goes past 12mb, the framerate and overall stability become increasingly bad until the game is unplayable. You can mitigate the problems a little bit by disabling the auto-saves, avoiding picking up and storing too many items, using the Cache Clear Code, reseting the game everytime the framerate starts tanking etc.
