Someone on reddit said the Ford is estimated at 21st May and the Jaguar on 26th May, don't know how true it is but I imagine the cars must be being released in the same order as they were originally?

 Yeah it was this list from GTPlanet. It was 1 day out on the DB5. Assuming it's also 1 day off on the Ford & the Jaguar it would be those dates that it'd return.

Honestly, if we really are getting to the end of the list I am super disappointed with the lack of cars that were pretty common in previous gran turismo games.

Can you share the link to that thread?

 

On top of the Ford and Jaguar for the trophy, I "need" the McLaren F1, so, a predicted time of arrival for that one would also be welcome, since I'm not exactly grinding a lot in GT7 and that McLaren costs a fortune...

Typical of them to double the number of cars in the garage but increase the time they're there on average by a factor of 3.
