Any missables/trophies i should look out for?

Based on my experience with the demo on Switch, it doesn't look like the list has any missables.

I'm not sure exactly who you mean by "The Reaper" but you should be fine as long as it's marked as complete in the pursuit list.

There were 4 quests where the quest giver died due to me taking too long and the trophy still popped.

I got the plat in like 15 hours, maybe 20.

 

You just need to complete the pretty short (5-8h) story, all side quests (there are like 10 side quests) and catch all fish (the longest task, but still doable because you can see how and where to get every fish in the boat documents even if never discovered).

 

Nothing missable, no video guides required, pretty chill and good game.

This sounds awesome. I started my journey this morning and I am in love already. I am a bit scared, but the atmosphere is fantastic and the gameplay seems right up my alley. Big plus: The Platinum icon looks cool. A boat would be more fitting, but the color makes it outstanding.

EDIT: I realize I talk mostly about the hooded figures which was already mentioned in posts above, but I think it is important to keep the possibility that failure is still possible in the 4 hooded figure and other pursuits, so I hope this is still helpful:

 

While no trophy seems missable yet, I do know that some pursuits can be affected negatively.  All four hooded figures require their requests fulfilled in a certain amount of time, the transport pursuits (Builder, Castaway, Dog, Hermit) could die (be lost) if you suffer Hull damage in the spot they occupy, same goes for the stone tablets in Devil's Spine. Any of these can be swiftly dealt with by quitting out before docking your boat, which will reset you back to your last dock.

 

I know from personal experience, if you talk to any of the hooded figures, don't feed them the three fish they need in a day or two, dock your boat/sleep/let time pass and save your game in anyway, the hooded figure will die with no chance to reload the pursuit because you have saved past a point of no return. The good news is the game considers the pursuit complete saying something like: "Hooded Figure died." Bad news: you do not get the Book reward (which can give some decent passive benefits). I can only assume if an escort mission ends in death or loss or any other pursuit that would be rendered impossible to continue due to a mistake of time or damage - that the game would still give you the pursuit completion, but take that at your own risk (I suggest you reload if at all possible)

You can get both endings in one go. You don’t have to create a backup. Once you finish the game, the game backs out and places you right in front of the ending decision, no matter what ending you do first.

 

Also the hooded quest giver shouldn’t die now no matter how long the quest will take. If he still does for some reason the quest counts as completed.
