Some of those tracks I played numerous times until I knew it off by heart and could plan the best way to drive without crashing as you need to do perfect runs. Just keep at it and you will get it. Always use the button during corners to gain boost (Just press it for like half a second while turning) and use boost after you take the corner and are in a straight road BUT not when you have a left or a right turn ahead. And keep practicing. I had a hard time too but after taking a break from the game I started it again and it felt pretty easy the 2nd time. Only the final 2 races are a bit hard but doable.
