You can’t in others, only this one. Once you you complete the game you unlock the hardest difficulty. As long as you have a save just before the final two fights you just reload that save then swap the difficulty in the menu. Then do the final fights and you get the trophy. If you don’t have a save then just load whatever save before the ending you have, play up until the end battle on any difficulty, then swap it.
