do you have to get under 1 minute in one playthrough? or does it take your best times from every game and use those as your final score? none of the guides anywhere explain this. ive also hit play again after i broke one of my records and then didnt do better and at the end it kept my last time instead of my best time which makes no sense why they would do that

For each of the three mini-games you can make as many attempts as you want, but in one sitting. I got this trophy the other day and I got 27 secs in the first one, 17 secs in the second one and 16 in the last one, beat the time by 0.2 secs. Actually it's not too difficult, just keep trying until you get the right time in each of the challenges.
