Winter challenge tips?

So I've tried two winter challenges so far - Lodge and Old Bridge.  Whatever was working before isn't working in the slightest now.  Can't catch any fish whatsoever.  I assume this game is trying to teach me something in it's usual fashion - telling me nothing whatsoever.

 

I've nearly caught a fish in the second Old Bridge Winter challenge.  There's a ton of casts where he has zero interest, but after multiple retries I've had him bite twice (10s hook bonus).  He snaps the line almost instantly - the tension meter flashes a good while with NO QTE prompt and when it finally pops up there's no time to press it before it snaps.  WTF?!?!  Really regretting getting this game.

 

EDIT: passed Old Bridge through brute force/luck.
