So I've been wondering how people have been getting this, as I haven't seen any cards that are possible for it. Apparently its an Undertaker 98 card that people got for pre-ordering the game. How are you supposed to get this achievement if you didn't pre-order the game?

If you didn't preorder the game and don't have the undertaker pack or nwo pack, the only way is to spend 25 dollars and buy nwo dlc, 2K sucks

Yes unfortunately Samael hit the nail on the head - currently only the preorder undertaker and the Hulk Hogan from NWO are the only cards that can make the platinum possible. I had heard the NWO pack will become free at some point but that could be literally months/ a year away knowing 2K. If you're not interested in paying for the NWO pack ( which is understandable), there may be some content patched in soon to address the lack of cards -  but I couldn't say anything on that other than hopefully sooner rather than later.

I didn't even realise I had the Undertaker pack in my box lol so I've started the long grind to levelling him up. thanks for the replies, hopefully 2k do something for the people who didn't pre-order or buy the disk version of the game.
