From a brief look at the online servers it seems a bit of a long shot to get a pirates scenario game going to the end. To answer my own question, it is completely possible to get these trophies by playing the Pirates scenario with one player/hotseat. The only thing to mention is that you'll only get one of the point-type trophies (Fightin', Treasure and Infamy) per scenario completion, so make sure that you focus on the other two (and win) when doing the second and third runs.
