Enemy location: Pickpocket

Does anyone know where the "Pickpocket" enemy can be found?

 

It is the only enemy I am missing and I am worried it may be a missable

my guess is that it's the guy that was on top of the mom and pop shop that auto engages you and you can ignore to fight him for 50 coin.

not sure if you can just make a new game and fight him again to see if the bestiary is linked across profiles.

That's who I'm thinking it is, guess I'll play on story up to there and see if it pops, if not... I guess it's another pretty big play through for me

I think the girl outside the Mom and Pop shop, for the debt collection mission is also a Pickpocket if you fail the dialogue.

I have done all quests and unfortunately it looks, to me, like the one up on the bridge is the only one in the game.

I'm pretty sure the fight with that girl is optional, regardless if you have done all the quests, since I recall there being a dialogue option to deal with it diplomatically, and another to fight her. But sadly, between those two being missed, I think you might be outta luck.
