Haven't played it on the PS5, but the PS4 version is very buggy as well (at least the EU version), even if you installed the latest patch. You mentioned that Perry glitched out of the screen at some points when you played the game. Did it look like this? If yes, it might have to do with the EU version since there are people who were able to get all trophies with the current patch, but I'm not sure about this or what to do about the bugs. Still not sure what causes them, but if you still want to get the platinum, you can try setting your system language to "English (US)".
