Tips for finding a Hop-Eye?

For the Without Discrimination  trophy you need to complete the bestiary and I'm only missing one entry and that is the Hop-Eye. Seems to be a green frog-like creature with big eyes. The only info I can find online is that they are a "rare random encounter" and they run away if you attack them. I don't think I ever saw one in my game and if I did then it ran away before I could kill or capture it. 

 

I was wondering if anyone has any tips to share for finding this elusive creature without revisiting every area and every dungeon while praying that one will randomly appear out of pure luck. Any tips are greatly appreciated!
