Help with Trophies

Hey guys, i just need a few tips on some trophies.  first of all, I need "like he just doesn't care" which means you have to hold up an enemy.  I've done this a few times, snuck up behind them and snake yells 'freeze!" I get in front of the guard and point at his head/groin but nothing happens and I dont get the trophy.  Next, I need the 'dont touch the sides' trophy which means you have to remove a bullet using the knife.  I've purposely attracted guards and let them repeatedly shoot me, but still no bullet to remove (i've removed crossbow bolts from the fear, and those darts from the end)

Help would be appreciated

I got the "like he just doesn't care" trophy when I went in front off the guard I hold up.

 

For  "don't touch the sides" I tried and tried again to get that. But in the end if you fight The Boss you got more bullets in you then you want
