Racer setup

Can someone please recommend a good racer/mod setup for grand prix and challenges? I’ve tried looking for guides and have done some experimenting with different racers and mods but still can’t platinum any challenges and somehow even with a strong lead the AI comes back at the last second and wins. The franticness of the game is fun but damn it feels like a slog.

I mainly used Knuckles with a build focusing in boost, with incredibly low acceleration and relatively low max speed. Save your ultimate for the latter half of the third lap and focus on making nice sharp corners and letting off the gas in hairpin turns so you don't go off the track particularly with higher difficulties. The game ended up being much easier than I initially thought, perhaps a 5/10 difficulty.
