So there's a creator round called hopscotch havoc that have a bunch of jumping pad things and your guy will continue to get boosted in the air the round is 2 min so does anyone know if I just do that if it counts for the 1 hour or do I actually have to fall off a platform?

I'm pretty sure all time spent airborne counts towards the trophy. Doesn't matter how you get off or back onto ground.

I want to confirm it works as well, but the better map to do it is TORNADO TRIAL. Soon after the first checkpoint there is a fan that allows you to spend 4 minutes in the air per round by simply holding the LS towards the fun so that you balance in the air.

Right now there is an event mode called Blunder Bridges, it's perfect to grind this trophy out. It's on for another 7 days or so.
