If you want to get these two annoying trophies knocked out early, here’s what I did: Right at the start of the Training Facility, there’s a hallway to the left with a bathroom in it. Once you enter the bathroom, one Mimicry Leech spawns, and I used the knife to kill it for the first trophy. As soon as you step back into the hall, another spawns, which I had Molotovs at the ready for. Got both trophies within a minute thanks to this spot (as an FYI, I’m currently playing on Easy. Not sure how much harder this would be with the knife on higher difficulties). IIRC from my GameCube days, these things get harder to kill the further into the game you go too.
