question about the collectibles

i have just completed the story and am going to work through the collectibles.

back on the main menu when i go to chapters it shows what i am missing. i go to a chapter to go get the missing things i need.

but when i go out of the chapter, back to the menu to proceed to the next chapter i like to work through, the later chapters aren't there? i have to load 'complete' to load all the chapters again.

also when in game, is there a way of keeping track of the collectibles? say i start a chapter and have 8 of 10 collectibles done. when i start that chapter and say go into joel's bag to see what i collected, would this all show or would it show none as have started the chapter?

should i go through a full walkthrough again on new game plus? what collectibles does not carry over?

update - go to chapter select, and either start backwards (from last chapter to first), saving progress on new saved file. or, go to chapter select in any order you want, collect whats missing, save on a new save file, then exit and load the 'save complete' file to choose next chapter select

Thanks.  I just completed the game and even though i followed a guide it says i'm missing collectables and conversations.  Which way did you go?
