Dungeons & Saddles

I fixed my nether issues, but now I seem to have a bit of a dungeon issue.  

In my home world, I found a large dungeon.  Searched the whole damn place up and down, and didn't find a saddle.

In my second world, I found a single chamber with one chest in it, and still no saddle to be found.

 

Is there only one dungeon per world, or are there multiple dungeons spread out over the entire world?  If there's only one per world, then I've been getting the worst dungeon spawns known to man.

there's quite a few dungeons... you'll find a saddle eventually... I myself have like 7 of them...

Personally I'd perform the stronghold exploit:

 

1) Take note of you seed or make a seperate copy of your map

2) Play the copy in Creative and use the unlimited ender pearls to find the stronghold

3) Take note of the co-ordinates

4) Use these co-ordinates to find the stronghold then search for the saddle and the end portal (if you still need it)

Yeah there are a few dungeons in every world I found 4 and I've got a saddle from the nether check Ibxtoycat on YouTube he does seed videos every Sunday, in 1 seed he found 6 saddles !!
