You can activate the easy mode on the overview page of a tour/DLC. You can alternate between the gold star objectives and the silver star objectives by pressing a button ( or AFAIR, but it's mentioned somewhere on the screen, can't say for sure as I haven't played it in a long time). If you talk about driving assists, these can be found in the settings (press the Options-button on the DS4 and enter the settings).
