How do you use rewind?

The guide says you can do it and how easier it makes everything but it never says what the controls are in the guide.  I'm on mission 16 and haven't used it once because I can't find the controls for it anywhere online.  But I brushed my touchpad and it looked like it came up, for about 1 second before I hit triangle and exited.  What do you actually push to use it?

push the options/pause button you would normally on most games now and it'll come up, then you can scroll across and click X to rewind

Thank you!  The things I've read just said "pause" so I hit pause with the right part of the touchpad and don't see anything.  Appreciate it!
