I want to start playing the Metal Gear series

My advice: start from MGS1, I played 1-4, and first one IMO is the best. A few years ago I had the same thought, and I'm so glad I started from the 1.

If you plan on platinuming MGS2, stock up on a few new controllers  (Virtually Impossible trophy ugh what a chore that was).

I just played the "important" mgs games (MGS from psx and mgs2 to mgs5) never bothered about the other parts. 

Mgs1 is probably the most important game from the psx so you should start from there.

Mgs2 is a cult game and a total mindfuck.

Mgs3 is like a movie and the most fun to play. 

Mgs4 is just a joke but the gameplay was amazing and the first two acts were as good as it gets. If you enjoyed the previous ones you will be entertained. Plus it had Metal Gear Online which was in my opinion the best online game (It got shut down in 2012).

Mgs5 has the worst story from the series but obviously has the best gameplay... They kind of made a sandbox and I didnt really like it.
