I can only answer the first 2 questions;

Better Fighting Game Series: Tekken, I didn't really have to think about this one, I remember playing Mortal Kombat on the PS1, and I just found it rather dull.

 

Better Strategy Game Series: Like others have stated, they are not strategy games, they are RPGs, an example of an SRPG would be Record of Agarest War, but back to my choice, I would have to say Persona, sure I haven't made much progress on P4G, but it's a lot more fun than the last Final Fantasy game I played, FF XIII

Although as some others have mentioned, the Tactics series of Final Fantasy games are SRPGs Definitely among the best ones.

For strategy wise, I'll say Persona since FF is the easiest of the two.
