It's really easy. Don't worry about it during your 1st PT. Then start a new game and use the unlocked cheats to get slow-mo-aiming.

 

I ended my speedrun with 99% accuracy.

Oh! One more thing, that I'm not 100% on but you may want to be safer than sorry:

 

When I started my speed&accuracy run, I originally opted to keep my stats and treasures from my 1st and crushing PTs. I noticed that the stats screen started the run with about 19 hours played and 55% accuracy. 

 

So I started a new game on a new save file and chose not to keep my stats and treasures from previous runs, just in case. 

 

Like I say, I'm not 100% on whether the game will just look at your stats page or will track any "New Game" separately, so doing this might not be essential.
