Asura's Wrath - Game was easy but bosses were epic.

Karnov - Back when I was 5 fighting the Mermaid, T-rex, three headed boss was pretty hard

Games like Soul sacrifice or Monster hunter.

They are basically a compilation of boss battles without any crap in between.

 

More games need boss fights which are fair, enjoyable and last a while. In most games, the boss fights are so boring.

imo bosses should not be invincible to attacks most of the time, they should just have a lot more health. I hate the games where they dont have much health, but because their defence is almost unbreakable (unless where the developers tell them to drop their guard on certain events) the battles are long but boring.

Final Fantasy VIII - Ultimecia, just loved spamming limit breaks on her and amazing soundtracks during the battles and Omega Weapon

The first game that automatically comes to mind is every one in Heavenly Sword. The fights and the characters themselves have so much larger than life personality. Besides the amazing visual effects, they really stole the show for me.

 

Arkham Asylum's were pretty good too, especially the Scarecrow fights.

Well, I guess nobody is going to mention it but I just plat Sly 3 and I liked a lot the fight with Tsao (bamboo forest :) ), my favorite from the trilogy.

Besides that, God of war bosses, Darksiders (with exception of the spider), shadows of Colossus.

The spider from Outland, I love it. And some bosses from Batman arkham series.
